Easy Peasy Pecan Rolo Pretzels

Some of the tastiest snacks in the world are the easiest to throw together. Before I went all gluten-free due to an unwelcome Celiac diagnosis, these Pecan Rolo Pretzels were one of my favorite snacks. I haven’t attempted them with gluten-free pretzels, but something tells me they would lack the same deliciousness. But being gluten-free doesn’t stop me from whipping these easy treats up, especially when my husband is getting ready to take a(nother) hunting trip. I like to make sure he has something tasty to take along with him, and these will certainly fit the bill! The salty-sweet-crunchy-smooth combination in these treats hits the spot perfectly, and, when you think about how easy they are to make, they are the obvious answer for roadtrip goodies!

Easy Peasy Pecan Rolo Pretzels

Ingredients
  1. - Waffle-style pretzels
  2. - Rolos (not mini sized)
  3. - Halved pecans
Instructions
  1. Preheat oven to 170.
  2. Line cookie sheet (with edges!) with parchment paper.
  3. Lay out a single layer of pretzels. How many you need is based on how many Rolos you have.
  4. Unwrap all Rolos and place a single Rolo on top of each pretzel. Remove any pretzels that aren't matched with a Rolo.
  5. Place in oven and warm until the chocolate becomes shiny.
  6. Remove from oven and press a pecan half into each Rolo.
  7. Place in fridge until chocolate is set and firm.
  8. Store in an airtight container.
Notes
  1. Try not to eat them all in one setting. 🙂

 The hardest part about this recipe is unwrapping all the Rolos. And the waiting.

    I would have to hide them from myself, and that never works out well.. Plus, when I give things to the other half to hide, he always puts them in the same place and I know where that is! 😉 Might be best just to make a few at a time, here.
