Celebrate Celiac Awareness Month with Some Sweet Snacks!

It’s been almost a year since my C-Day diagnosis. I joined the Celiac club on May 30th, 2013, and who knew it was Celiac Awareness Month?! To honor my successfully surviving a full year of Celiacs and to celebrate Celiac Awareness Month, I’ve partnered with one of my favorite gluten-free providers to offer you some hot new GF products!

Bobs Red Mill Giveaway

After my diagnosis (and a week or so of wallowing in utter sadness), I began to explore the available gluten-free options. Because baking and baked goods had been my life-blood for thirty-plus years, I was especially eager to find a reliable baking company that would allow me to continue my love of tasty desserts and treats. I happened upon Bob’s Red Mill very early on in the process and have LOVED them ever since. As it turns out, gluten-free can be pretty darn tasty! Not only is Bob’s a good company, they produce some of the tastiest gluten-free products I’ve ever experienced. Seriously. Every time I bring their gluten-free brownies in to share with my colleagues, they get gobbled up by the GF and non-GF alike! Everyone raves about them, and, if I didn’t tell people in advance, no one would even know they were gluten-free. Because I love them so much, I’m always looking to share them with all of my friends. And Celiac Awareness Month is the PREFECT time to host another giveaway!

It just so happens that Bob’s Red Mill has unveiled some tasty new gluten-free options for us Celiacs to enjoy (and non-Celiacs as well!), and I’ll be giving some away this month!   2. Ah, I started this on my phone and I didn’t see I needed to leave the recipe! 1/2 peanut butter, 2 tbsp. coconut oil, 2 tbsp. maple syrup. Melt down in a pan. Add 1/2 cup sliced almonds, 2 cups of oatmeal, 2 tbsp. of cocoa, and for kicks I add a little chia seed and flax seed and ALWAYS some chocolate chips (the original recipe calls for cranberrys, but who wants that??!) Stir it all together and pour in a pie pan (because that makes the presentation so much prettier!) Refrigerate for at least 20 minutes before serving, but I do it over night. Enjoy your breakfast!!
